Concept

Shibuya

— A new take on jingisukan grilling — As good to watch as it is to eat. Nama-Lamb Jingisukan × Ginjo Lamb® shabu-shabu

AREA

Shabu-shabu & Jingisukan in Shibuya

If you are looking for shabu-shabu in Shibuya (渋谷), this one is within walking distance of the station. We are one minute from Exit 1 of Shibuya Station, on the third floor of a building at the foot of Dogenzaka (道玄坂) — the same Exit 1 whether you arrive on the Tokyo Metro Hanzomon Line or the Tokyu Den-en-toshi Line, right where the nightlife of Centre Gai and Dogenzaka begins. Nama-Lamb Jingisukan & Lamb Shabu KINNOME Shibuya is a 30-seat room that also grills. At the Shibuya store, fresh lamb seared on the iron pan and Ginjo Lamb® shabu-shabu swirled in the pot arrive at the same table. Every seat is a table seat, at a scale that suits a dinner for two, a drink after work, or a party among friends — with generous ingredients for quiet business hospitality as well. We open at 17:00 on weekdays and 16:00 at weekends and on public holidays.

  • An overhead view of the full course laid out on white: a gold twin-broth pot, thinly sliced lamb, lamb steak, fresh lamb, offal, mushrooms and salad
  • A small bowl with a black geometric pattern on white, set on a black table and filled with thick, milky white sesame sauce

FEATURE

What sets Shibuya apart

Grilled fresh lamb — nama-lamb jingisukan — belongs to Shibuya alone. KINNOME spent years working with lamb as a shabu-shabu specialist before trying the grill for the first time here, and the restaurant carries it in its name: Nama-Lamb Jingisukan & Lamb Shabu KINNOME Shibuya. There is an à la carte grill list too — shoulder loin, kintoro, rib loin, fresh mutton, lamb tongue, lamb chops and more. There are sets pairing the grill with Ginjo Lamb® shabu-shabu, and an all-you-can-eat course that comes with one serving of grilled fresh lamb. The drinks list includes a broad range of bottled wines and alcohol-free beer, and there are desserts such as the KINNOME sesame daifuku. The room itself is designed around Hokkaido, so grill and hot pot belong together on the same table. There are 30 seats in all, every one of them at a table.

  • House-crafted sauce poured into a pale green scalloped bowl: a clear, deep reddish-brown soy-based sauce, with a thin stream falling and rings spreading across the surface

  • A cold dish of thinly sliced lamb mounded on a white plate, drizzled with black vinegar sauce and topped with cilantro, set on a wood-grain table
  • Lamb offal hot pot prepared in an iron pot before cooking: lamb offal, seasoned lamb, chrysanthemum greens and garlic chives arranged over bean sprouts, with butter at the center
  • A gold twin-broth pot shot from directly above on white: mala broth with floating chilies on the left, yakuzen paitan with jujubes and goji berries on the right

HOW TO ENJOY

Lamb Shabu KINNOME How to Enjoy Lamb Shabu-Shabu (7 Steps)

STEP 1Heating the pot (done by our staff)

We heat the pot to suit the broth you ordered.

  • Shabu-shabu with our house sauce: hot water
  • Mala shabu-shabu: mala broth
  • Other shabu-shabu: each course's own broth

Once the pot is hot, our staff will explain how to eat.

  • STEP 1
A full course on a white table: a small mala hot pot on a burner, rolled lamb, desserts and drinks
STEP 2Swish the lamb

Take three or four slices of lamb at a time and swish them through the boiling water or broth for about one to two seconds.

※ Please make sure the meat is cooked thoroughly according to its condition before eating.

STEP 3Dip it in our secret house sauce

Dip the swished lamb into our secret house-made sauce.

Add grated onion, grated daikon with chili, or green onion to taste for even more flavour.

Our special salt sauce, sesame sauce and ponzu are also available.

  • STEP 2
A table set around a divided hot pot and a jingisukan grill, with sliced lamb, mushrooms and vegetables, condiments, noodles and rice balls; chopsticks lift a slice of lamb
  • STEP 3
Rare mushrooms in a black lacquered box, each variety marked with a wooden name tag
STEP 4Enjoy lamb shabu sushi

Place the lamb on a sushi-shaped rice ball and enjoy it as lamb shabu sushi.

We recommend wasabi salt, which brings out the flavour of the lamb.

STEP 5Enjoy vegetables and mushrooms

Add vegetables, mushrooms and any other ingredients you like to the pot and enjoy them together with the lamb.

  • STEP 4
A spread before a gold-framed KINNOME sign: a tower of rolled lamb, meat sushi, wagyu, a divided hot pot and small dishes of condiments
  • STEP 5
Mushrooms, leafy greens, peppers and root vegetables packed into a black lacquered box
STEP 6Finish with Sapporo ramen

We recommend finishing with Sapporo ramen in the broth, now rich with the flavour of the lamb and vegetables.

Boil the noodles in the pot and dip them in our secret house sauce like tsukemen.

Add pepper to taste for an even better finish.

STEP 7Topping up the water or broth

If the water or broth in the pot runs low during your meal, add water or the dedicated broth as needed.

Keep it at its best and enjoy your lamb shabu-shabu to the very end.

  • STEP 6
Yellow Sapporo ramen noodles for the finish, served in a black box
  • STEP 7
A close-up of a platter of mushrooms, with a champagne glass and lacquered boxes behind

Exterior

Exterior of Shibuya

Look for this entrance.

  • The entrance at night: the illuminated KINNOME sign with a sheep in sunglasses, a passage and stairs leading inside, and a 3F sign
  • The passage from the building entrance to the restaurant. Spotlights fall on grey walls drawn with white line art, and at the far end a sign reading “Nama-Lamb Jingisukan / Lamb Shabu KINNOME” glows on a gold wall

Atmosphere

Shibuya
  • Rows of booth seats with black benches. A blackboard wall is chalked with a lamb, notes on each cut and the words “Lamb Shabu KINNOME, the tasty cuts”; on the right is a gold-leaf panel wall, and silver exhaust ducts hang from the ceiling
  • The round sign lit at the entrance of the Shibuya store, showing a sheep in sunglasses and the brushed KINNOME lettering
  • A view down the dining floor at the Shibuya store: wooden tables line a gold tile wall, with ceiling pipework and Edison bulbs running overhead
  • A lamb cuts diagram drawn on a grey wall at the Shibuya store; white lines divide the outline of a sheep into SHOULDER, RACK, SIRLOIN, LEG and other cuts
  • A mural drawn in white lines on a grey wall at the Shibuya store: polka-dot bunting runs diagonally, with fish, a hot-air balloon, a beer mug and flowering plants drawn in
