Concept

Ginza Main Store

Ginza 8-chome, a 3-minute walk from the Ginza exit of Shimbashi Station. Our flagship restaurant serves lamb shabu-shabu in a calm, unhurried setting — equally at home for banquets, farewell parties, business entertaining or a quiet dinner for two.

AREA

Shabu-shabu in Ginza & Shimbashi

Ginza 8-chome (銀座八丁目) — three minutes on foot from the Ginza Exit of JR Shimbashi Station (新橋駅), and ten minutes from Ginza Station (銀座駅) on the subway. This is the southern end of Ginza, where the district runs down to meet Shimbashi, and we are on the third floor. Lamb Shabu KINNOME Ginza Main Store is a 50-seat house given over to shabu-shabu and lamb shabu-shabu. There is room here for most of the reasons people gather in Ginza: business entertaining, a department banquet or farewell party, an anniversary dinner for two. Table seats are screened from one another, and private rooms take parties of five or more. Banquet courses with an all-you-can-eat option are available. We open at 12:00 on Saturdays, Sundays and public holidays — lunchtime onwards — and at 15:00 on weekdays, serving until 23:15.

  • Nine kinds of condiments set out on a black square tray: Sichuan pepper, chili, white sesame, garlic, jujube and goji berries portioned into small white bowls
  • Hot-pot vegetables on a flat indigo plate: bok choy, tofu, carrot, finely shredded leek, watermelon radish and glass noodles arranged in a fan

FEATURE

What sets Ginza Main Store apart

KINNOME began here. The Ginza Main Store opened in June 2000 in Ginza 8-chome as the first restaurant of the brand, and it is still the only one of our four to carry the name honten — main store. The dining room is non-smoking throughout, with 50 seats built mainly around screened tables. Seated banquets take up to 50 guests, and a party of 50 can reserve the whole floor. Credit cards and cashless payment are accepted, and we are happy to discuss bringing your own drinks.

  • Medicinal ginseng in a pale wood box, its thick root reaching out past the frame, casting shadows against a black background

  • Artificial monstera and dahlias spread on a white table, three condiments including yuzu kosho in glass jars, and a KINNOME Lamb Shabu branded plate

  • A small bowl with a black geometric pattern on white, set on a black table and filled with thick, milky white sesame sauce
  • House-crafted sauce poured into a pale green scalloped bowl: a clear, deep reddish-brown soy-based sauce, with a thin stream falling and rings spreading across the surface
  • A silver twin-broth pot seen straight from above: paitan broth on the left, mala broth with floating chilies on the right, with jujubes and goji berries settled at the bottom

HOW TO ENJOY

Lamb Shabu KINNOME How to Enjoy Lamb Shabu-Shabu (7 Steps)

STEP 1Heating the pot (done by our staff)

We heat the pot to suit the broth you ordered.

  • Shabu-shabu with our house sauce: hot water
  • Mala shabu-shabu: mala broth
  • Other shabu-shabu: each course's own broth

Once the pot is hot, our staff will explain how to eat.

  • STEP 1
A full course on a white table: a small mala hot pot on a burner, rolled lamb, desserts and drinks
STEP 2Swish the lamb

Take three or four slices of lamb at a time and swish them through the boiling water or broth for about one to two seconds.

※ Please make sure the meat is cooked thoroughly according to its condition before eating.

STEP 3Dip it in our secret house sauce

Dip the swished lamb into our secret house-made sauce.

Add grated onion, grated daikon with chili, or green onion to taste for even more flavour.

Our special salt sauce, sesame sauce and ponzu are also available.

  • STEP 2
A table set around a divided hot pot and a jingisukan grill, with sliced lamb, mushrooms and vegetables, condiments, noodles and rice balls; chopsticks lift a slice of lamb
  • STEP 3
Rare mushrooms in a black lacquered box, each variety marked with a wooden name tag
STEP 4Enjoy lamb shabu sushi

Place the lamb on a sushi-shaped rice ball and enjoy it as lamb shabu sushi.

We recommend wasabi salt, which brings out the flavour of the lamb.

STEP 5Enjoy vegetables and mushrooms

Add vegetables, mushrooms and any other ingredients you like to the pot and enjoy them together with the lamb.

  • STEP 4
A spread before a gold-framed KINNOME sign: a tower of rolled lamb, meat sushi, wagyu, a divided hot pot and small dishes of condiments
  • STEP 5
Mushrooms, leafy greens, peppers and root vegetables packed into a black lacquered box
STEP 6Finish with Sapporo ramen

We recommend finishing with Sapporo ramen in the broth, now rich with the flavour of the lamb and vegetables.

Boil the noodles in the pot and dip them in our secret house sauce like tsukemen.

Add pepper to taste for an even better finish.

STEP 7Topping up the water or broth

If the water or broth in the pot runs low during your meal, add water or the dedicated broth as needed.

Keep it at its best and enjoy your lamb shabu-shabu to the very end.

  • STEP 6
Yellow Sapporo ramen noodles for the finish, served in a black box
  • STEP 7
A close-up of a platter of mushrooms, with a champagne glass and lacquered boxes behind

Do I need a reservation?
We recommend it. Reserve online or by phone on 03-5568-8058. For private hire for 50 guests, please contact the restaurant directly.
Can I smoke inside?
The Ginza Main Store is non-smoking throughout.
What time do you open? Can I come at lunchtime?

Can I bring children?
Yes. Infants, pre-school children and primary-school children are all welcome.
Is lamb easy to eat if I have never tried it before?
